STRAWBERRY RECIPES
Here's a few ideas for strawberry time.
Strawberry Coffee Cake Muffins
Prep time: 10 mins
Cook time: 20 mins
Total time: 30 mins
For the muffins:
¼ cup unsalted butter, softened
½ cup granulated sugar
1 egg
1 teaspoon vanilla extract
2 teaspoons baking powder
Pinch of salt
½ cup buttermilk
1½ cups all-purpose flour
2 cups fresh strawberries, diced small
For the crumble:
½ cup all-purpose flour
¼ cup butter-chilled and cubed
¼ cup brown sugar
¼ cup granulated sugar
Instructions
* Preheat oven to 350 degrees F. Line a 12 cup standard muffin tin with paper
liners or coat with nonstick spray, set aside
To make crumble:
*In a medium bowl, combine granulated sugar, brown sugar, flour and chilled cubed butter
Stir with a fork or pastry blender until the mixture is crumbly
Set in the fridge until ready to use
To make muffins:
* In a large mixing bowl cream the butter and granulated sugar until light and fluffy
*Add egg, vanilla extract and buttermilk, beat until well combined
*Sift in the flour, baking powder and pinch of salt, beat on low speed until just mixed
*Gently fold in about half of the strawberries
Fill muffin liners ¾ full with batter, top with remaining strawberries and then sprinkle crumble on the tops of the muffins
Bake for 18-20 minutes, until the muffins are lightly browned on top and a toothpick inserted in the center comes out clean

5-Minute Healthy Strawberry Frozen Yogurt
Prep: 5 minutes
Yield: 4 servings
Ingredients
4 cups frozen strawberries
3 Tablespoons agave nectar or honey
1/2 cup plain yogurt (non-fat or full fat)
1 Tablespoon fresh lemon juice
Instructions
*Add the frozen strawberries, agave nectar (or honey), yogurt and lemon juice to the bowl of a food processor. Process until creamy, about 5 minutes.
Serve the frozen yogurt immediately or transfer it to an airtight container and store it in the freezer for up to 1 month.

NO-BAKE STRAWBERRY CREAM CHEESE JARS

Servings: 6 -8 servings
Ingredients
2- 8 ounce packages cream cheese, softened at room temperature
1 pound strawberries washed and stems removed
3tablespoons Agave nectar
fresh mint to garnish
Instructions
*Beat the cream cheese with the paddle attachment in a mixer on medium-speed until creamy.
* Dice half of the strawberries and add to the mixer, mix over medium-speed until the strawberries are pureed into the cream cheese.
*Slowly add in the and mix. Taste and add more sweetener, if needed.
Layering
*Using jars, add the cream cheese mixture to the bottom
* add a couple of diced strawberries
*follow with another layer of the cream cheese mixture.
*Repeat until the jars are full.
*Garnish with diced strawberries and fresh mint.

STRAWBERRY FREEZER JAM
Ingredients
2 cups crushed strawberries (about 1 qt. fully ripe strawberries, stems removed)
4 cups granulated sugar
3/4 cup water
1 box Sure Jell Fruit Pectin (*see note)
Containers to put the jam in - I like to use half-pint mason jars
Instructions
*Rinse and dry the containers you'd like to put the jam in (enough for 5 cups).
* I always use glass mason jars but plastic containers work great also. This recipe fills 5-6 half pint jars.
*Using a a food processor add strawberries and pulse just a few times, until strawberries are well diced, but not totally mashed.
*Measure exactly 2 cups of strawberries into a large bowl. (It's really important to measure the berries and sugar exactly, or the jam will not set properly.)
*Add the sugar, one cup at a time, stirring really well after each addition. Let stand for 10 min., stirring occasionally.
* Meanwhile, add water and pectin package to a small saucepan. Bring to a boil over high heat, stirring constantly.
Once boiling, stir for 1 min. Remove from heat and add it to the strawberry mixture.
*Stir mixture really well, for several minutes, until sugar is well dissolved.
Fill containers with jam and leave 1/2'' of head-space at the top. Cover with lids and allow to stand at room temperature for 24 hours.
After 24 hours you can store jam in the refrigerator for up to 4 weeks or freeze it for up to 1 year!
